Today was the first attempt at lacto fermentation. We made hot sauce from Wri-Wri, Datil, Tabasco, Kim Chi peppers. Added tomato garlic and citrus to the batch. Finished it off today! Velvet beans are really popping out! We never tried these before but understand they are called stinging velvet beans as the cute furry hairs you see are stingers and can cause a maddening itch! Our longevity spinach has really taken over its own spot as an understory with a Kafir lime and clumping Hawaiian golden bamboo. Great treat to snap off and eat or plant. Fermenting my hot sauces. On left is habanero, Tabasco, Kim chi sauce. On right is Aji pepper sauce. Both have other added ingredients for flavor.
